Strawberry, coconut and vanilla ice lollies

Summer is here... or is it? But let's be honest, you do not need hot weather to eat ice cream or ice lollies otherwise the whole frozen food market wouldn't exist! These ice lollies are incredibly easy to make and contain no refined sugar at all. I didn't even add honey, maple syrup, stevia or any other sweeteners. My 20 months old daughter loves them too.

Ingredients (makes 10)
300g strawberries (or add a few other berries to mix it up)
2 cups of coconut milk (400 - 500ml)
1-2 teaspoons vanilla extract
* Very ripe banana (optional, it will make them sweeter)

Directions
1. Clean and hull your berries (along with banana, if using) and, using a blender whizz this up
2. Whisk the coconut milk and vanilla together, making sure there are no lumps left. Add this mix to the strawberries*
3. Divide the mixture between your ice lolly moulds. Leave to set in the freezer for at least 4 hours.
