Simple and easy lunch - Kale Caesar Salad with a Poached Egg

My favourite go to lunch... Easy to make, low in carb and high in nutrients. It's a firm favourite in our house (and the Evolution Organics team are very keen too).

Kale Caesar Salad (1 generous portion)

Ingredients 

  • 75g kale, chopped 
  • 1 tbsp extra virgin olive oil 
  • 1 tbsp lemon juice
  • 1/2 tsp Himalayan salt
  • 1 small cos lettuce, chopped
  • 3 rashers of good quality nitrite free bacon cooked until its crispy 
  • 1-2 tbsp Caesar dressing (or make your own!) 
  • 50g organic parmesan cheese, grated 
  • 1-2 tbsp pine nuts, toasted 
  • 1 large organic free range egg (duck or chicken)


Directions:

  1. Massage the kale in a large bowl with the olive oil, lemon juice and salt 
  2. Whilst the kale is resting, poach the egg in boiling water (+ 1 tsp vinegar and salt) 
  3. Cooking time: Duck Eggs 3 minutes & Chicken Egg 2 minutes
  4. Once it's cooked, remove the egg using a slotted spoon and gently pat it dry
  5. Add the lettuce to the kale then the Caesar dressing and mix it well. Transfer this to a serving dish 
  6. Chop the bacon and add to the kale followed by grated parmesan, pine nuts and finally egg 
  7. Serve immediately and enjoy
