2 Healthy Drinks for Hot Summer Days

Summer is slowly showing it's face and with that all manners of sweet drinks and cocktails. I love a cocktail, especially in the sun but if you are limiting your alcohol intake (or simply would rather not drink) and/or if you don't want to add too much sugar to your diet (because let's face, the majority of fruit cocktails/mocktails contain high levels of sugar) then here is the solution.
I decided to add coconut water and chose Laird Superfood Coconut Water, but you can use any good quality coconut water. Laird Hydrate Coconut Water Water + Aquamin use freeze-dried coconut water. Freeze drying coconut water preserves flavor and nutrients like potassium and other electrolytes. They have added Aquamin TM, a natural multi-mineral complex made up of magnesium citrate and trace minerals in varying amounts. Aquamin Magnesium is derived from seawater, and it is an excellent source of magnesium.
Strawberry & Mint Cooler
- 2 tablespoons Laird Coconut Water + 400ml of water*
- 12 organic strawberries
- Juice of 1 lime
- 10 mint leaves
- 6 ice cubes**
- Optional: 1-2 teaspoons Erythritol
*If using fresh coconut water, use 400ml
**You can add the ice to your blender to make a thicker drink or add it at the end.
Directions: Add the ingredients to your blender (with or without the ice) and serve immediately in 2 frosted glass.
Zingy Cucumber Frappe
This is enough for 2 servings
- 2 tablespoons Laird Coconut Water + 400ml of water*
- 1 cucumber thinly sliced
- 1/2 to 1 teaspoon grated ginger
- Juice of 2-3 limes
- 4-6 mint leaves
- 2-3 teaspoons Erythritol
*If using fresh coconut water, use 400ml
Directions: Add the ingredients to a large jug. Serve over ice - very cold.
