Word of warning - reading this article will induce hunger, and make you crave a mikshake!
But fear not, we have an alternative... and although this is a healthier version, it's one that will satisfy your sweet tooth.
And with only 4 ingredients, it's a super easy recipe too! All you need is a blender, a freezer and an ice cube tray.
1 tin Organic Coconut Milk (we used Biona Organic)
2 tbsp Vanilla Bean Paste
Almond Milk or Coconut Milk
1 cup Strawberry, quartered
Optional – Coconut Whipped Cream*
To a blender, add the coconut milk , vanilla pean paste and mix until it forms a smoothie like mixture
Pour into an ice cube tray and freeze overnight
Take the frozen coconut ice cubes (about 3-4 cubes) and add to a blender with the strawberries and mix until smooth
If it’s too thick, add a few splashes of coconut/almond milk
Optional – top it with coconut whipped cream, and any other toppings such as coconut flakes, cacao nibs, freeze dried strawberries, ect
MAKING THE COCONUT
Chill a tin of coconut milk overnight in the refrigerator
Scoop the hardened coconut cream (the clear liquid can be used later)
Whip with a hand mixer until peaks form
It can be sweetened with sifted powdered sugar/erythritol
