- “True” Ceylon cinnamon (Cinnamomum zeylanicum) is native to Sri Lanka and southern India.
- The more common variety, Cassia cinnamon (Cinnamomum aromaticum), is known as “Chinese” cinnamon.
While Cassia cinnamon can contain undesirable levels of a chemical called coumarin, a powerful anticoagulant with potential carcinogenic and toxic properties, Ceylon cinnamon has been shown to contain almost undetectable levels of coumarin – making it a much safer option.
