The best Gingerbread Lattes Recipes!

As soon as we are 6 weeks away from Christmas I get in the festive mood - I feel it's okay to start looking at decorations (and maybe buy a few), put my wreath on our door, warm cosy nights in, mulled wine and cyder, you get the drift. And finally, my favourite "Christmassy" way to start the day; coffee with a festive twist!
I used to buy a gingerbread latte from my local coffee shop. It tasted amazing but afterwards I would get an almighty crash. This was mostly due to the very high amount of sugar in each cup (at least 12 teaspoons of sugar!). I don't want that amount of sugar in my body at any time (especially not that early).
What I want thought is the sweetness and spices you get from a gingerbread latte without the sugar and also with the added benefits of a bulletproof coffee (coffee + butter + MCTs). The benefits of bulletproof coffee when consumed alongside a healthy diet, may help you lose weight and increase your energy levels so here is my recipe for my favourite Bulletproof Gingerbread Latte and and also a vegan version.

Bulletproof Gingerbread Latte (keto friendly)
- 300ml freshly brewed very hot coffee
- 1 tablespoon unsalted butter
- 1 tablespoon MCT Oil (see our selection HERE)
- 2 scoops Vital Protein Collagen Creamer Vanilla*
- 1 teaspoon Pumpkin Spice Mix (I used McCormicks but you can try another one)
- Optional: 1 dash of stevia or NKD Living 100% Natural Erythritol
How to? Add all the ingredients to your blender and mix until frothy.
* If you don't want to use collagen, you can replace with 1 teaspoon vanilla essence
Gingerbread Latte (vegan)
- 300ml just boiled water
- 3 tablespoons Laird Original Instafuel (ready mixed premium instant coffee and their superfood creamer)
- 1 teaspoon vanilla extract
- 1 teaspoon Pumpkin Spice Mix (I used McCormicks but you can try another one)
- Optional: stevia or NKD Living 100% Natural Erythritol
How to? Add all the ingredients to your blender and mix until frothy. If the coffee is too strong, add some a splash of your favourite plant based mylk.
