Healthy holiday gingerbread men

I think everybody that has met me knows that I love Christmas and one of my favourite things about the holidays is the food (big surprise there) and these little beauties are a new recipe I have just recently tried and they are already a much-loved version. The only problem is that you might end up eating the whole lot.
Ingredients
- 300g whole rye flour
- ½ teaspoon baking powder
- Large pinch of Himalayan salt
- 1 tablespoon ground ginger (you can add more – depends on taste)
- 2 teaspoon ground cinnamon
- 5 whole cloves, ground
- ½ teaspoon grated nutmeg
- 1 tsp of vanilla extract
- 75g coconut oil
- 50g coconut sugar
- ½ cup of runny honey or molasses
- 1 large egg, beaten
Directions
- In a large bowl, sift together the flour, baking powder, salt and spices. Make a well in the dry ingredients
- Gently melt the coconut oil, coconut sugar and honey (or molasses). Let this rest for 5 minutes (so it’s not hot anymore)
- Add the wet mixture and an egg to the dry mix. Stir with a wooden spoon until well blended
- Wrap in cling film and let it rest in the fridge for 1 hour
- Pre heat your oven to gas mark 4
- Take it out, roll until its fairly thin and using your cookie cutter, press out the shapes you want and cook for 8-10 minutes on a baking sheet covered with baking parchment
- Let the cookies cool on the sheet and decorate with your favourite icing and... Merry Xmas!
