Healthy holiday gingerbread men

I think everybody that has met me knows that I love Christmas and one of my favourite things about the holidays is the food (big surprise there) and these little beauties are a new recipe I have just recently tried and they are already a much-loved version. The only problem is that you might end up eating the whole lot.

Ingredients

  • 300g whole rye flour
  • ½ teaspoon baking powder
  • Large pinch of Himalayan salt
  • 1 tablespoon ground ginger (you can add more – depends on taste)
  • 2 teaspoon ground cinnamon
  • 5 whole cloves, ground
  • ½ teaspoon grated nutmeg
  • 1 tsp of vanilla extract
  • 75g coconut oil
  • 50g coconut sugar
  • ½ cup of runny honey or molasses
  • 1 large egg, beaten

Directions

  1. In a large bowl, sift together the flour, baking powder, salt and spices. Make a well in the dry ingredients
  2. Gently melt the coconut oil, coconut sugar and honey (or molasses). Let this rest for 5 minutes (so it’s not hot anymore)
  3. Add the wet mixture and an egg to the dry mix. Stir with a wooden spoon until well blended
  4. Wrap in cling film and let it rest in the fridge for 1 hour
  5. Pre heat your oven to gas mark 4
  6. Take it out, roll until its fairly thin and using your cookie cutter, press out the shapes you want and cook for 8-10 minutes on a baking sheet covered with baking parchment
  7. Let the cookies cool on the sheet and decorate with your favourite icing and... Merry Xmas!
