I am sure that the majority of you have heard about chia pudding? If not, then its really easy: chia seeds soaked overnight in milk (dairy or other).
Chia seeds are easy to add to any recipes and are packed full of protein, fibres, minerals, omega3 and other healthy fats along with antioxidants. Unlike other seeds you do not have to ground them to consume them and they can be added to pretty much anything (I sprinkle some on sandwich filling, yogurt, salads, soups, you name it, I probably tried it.
Lucuma, on the other hand, is not as well known. I only found out about it early last year (and that's because I was given a sample). Raw lucuma powder comes from Peruvian Lucuma fruit and makes a great natural sweetener. It is a source of carbohydrates, fibre and calcium. Add a spoonful to raw deserts and smoothies for a delicious subtle sweetness.
This chia seed pudding recipe it brilliant. It will keep you full until lunch time but beware, if you give a taste to your 1 1/2 years old daughter, she will devour the whole thing!
Chia Pudding with Lucuma and Berries (makes 1 portion)
1/4 cup chia seeds
1 cup almond milk - check out Evolution Organics homemade almond milk recipe
1 tablespoon of lucuma powder
1 pinch of Bulletproof Upgraded Vanillamax
1 tablespoon of maple syrup (optional)
Topping Raspberries, blueberries, goji berries, sunflower seeds, pumpkin seeds, ect.
1. In bowl mix all the ingredients together (apart from the topping). Cover a place in the fridge, covered, overnight.
2. In the morning, give it a stir, add a splash of water if too thick. Top with the berries and enjoy.
